Rebecca’s Dream Travels Donuts

Who doesn’t love donuts? I certainly do. I’ve run the Marine Corps Marathon twice and have thought the entire race about how delicious the donut holes are that are provided at mile 25. However, donuts always seemed unnerving to me and complicated since you classically fry them. I hate a mess and I hate anything that can make my apartment stink for hours until I discovered this recipe where you bake the donuts. While donuts can seem unnerving, these aren’t.

When I start to think of how to customize a recipe, I always try to think of what I have enjoyed that are compliments to each other from experiences I have had. So the twist on the recipe for myself is I am making two distinct flavors. The first one is cardamom and sugar donuts due to my love of cardamom. My second twist is a orange glazed donut with chocolate shavings. This combination always reminds me of my favorite chocolate from childhood, orange sponge candy.

Ingredients Needed:

¼ cup Butter

½ cup Sugar

¼ cut Vegetable Oil

1 cup milk

¼ tsp Baking Soda

1 ½ tsp Baking Powder

¾ tsp Salt

2 2/3 All Purpose Flour

1 tsp Vanilla

2 eggs

1/3 cup Brown Sugar

Tools Needed for Recipe:

1) A Donut Pan for the oven-I personally use Silicone so I can neatly fold it in my cabinets

2)A mixer of some type so you can cream the butter well.

Recipe Steps:

Preheat the oven to 425 F and grease the donut pans

Add the butter, oil, and both sugars in a mixing bowl until it looks smooth

Add in the eggs one at a time watching to make sure each egg is absorbed before moving on to the next step

Mix the baking powder, baking soda, and salt together in a small bowl. Once properly combined, add to the mixture in the mixing bowl.

Alternate between the flour in the mix adding each element to the mixing bowl. Make sure to start and finish with flour. At this point, the batter will seem thick.

Fill each donut shape three- fourths full before adding the donut pan into the oven. They should bake approximately 10 minutes respectively. Once you can insert a toothpick and it is clean, you can pull the donuts out of the oven.

Wait approximately 5-7 minutes to release from the donut molds.

Serve plain or with toppings of your choice.

Rebecca’s Twist to the Recipe:

Cardamom and Sugar Powder
: Cinnamon sugar is usually composed of ½ cup sugar with 2 TBSP of Cinnamon so I just swap out Cardamom instead of the Cinnamon. Cardamom is classically thought of as a Scandinavian spice. I love it because it has floral notes in it and reminds me of when I’ve been traveling overseas. To create cardamom sugar donuts, simply fill a reusable Ziploc bag with the cardamom sugar mixture and toss one warm donut in at a time. Shake each donut for a good 30 seconds until it is fully covered.

Orange Glaze with Chocolate Shavings A sugar glaze is incredibly easy and seems more complicated than it is. The components of it are usually some water/liquid and confectioner's sugar. To create the orange glaze icing, below is the mixture I used: 3 TBSP of orange juice with 1 1/3 cup of confectioners sugar. I also added in about 1 TBSP of orange zest to make the color really vibrant. Simply mix the above with a whisk. When donuts are still warm, dip the top of the donut in the glaze and then cover with chocolate shavings.
